Eggplant-smoked tuna and tofu in coconut milk |
Here we prefer using small green eggplant because its taste is little bit bitter but getting fused in our tongue. Well, I think it depend on the taste, if you dislike it, you can use another various of eggplant ( purple eggplant or big green eggplant ). In my hometown, the eggplant is very cheap, it's about $50 sen per one kg. Let's start cooking now...
Ingredients:- Small green eggplant cut into 2
-Smoked tuna cut into 2
-Fried Tofu 6 Pcs, it can be found in Indonesian traditional market
-Small- red- chilly 10 pcs
-Big-red-chilly 1 pcs
-Garlic 4 Cloves
-Red Onion 5 cloves
-Tomato 1 Pcs
-Indonesian bay leaves 2 pcs
-4cm of galangal, crack it with pestle
-salt
-sugar
-1 bowl of diluted coconut milk
-1 bowl of condensed coconut milk
-frying oil 2 tablespoon

As for information,you can replace it with instant coconut milk if you want. But here, I intentionally introduce you how to cook it in traditional way as my grandmother and my mother used to teach me before and mostly old Javanese prefer to cook it in traditional way rather than using machine . Because from traditional touch will create different taste than using machine , even though using instant ingredient and using machine will save you more time

- Grated coconut, then give water and squeeze it with the sieve, then divide into two parts, diluted coconut milk and condensed coconut milk.
- Heat the oil , put chilli,garlic,red union , tomato ,then saute the spices for 3 minutes
- Crush spices except galangal and bay leave untill smooth using grinder or blender.
- Fried tuna for + / - 3 minutes and lift
- Boil diluted coconut milk, put the crushed spices, add the galangal ( press with hammer ) and bay leaves
- Add eggplant, tuna and tofu, then condensed coconut milk until boiled. then lift..
